For example, if you want to can sauce or paste, Roma or Amish paste are going to serve you well. They tend to be low moisture, have small seed pockets and high on flavor.
If you want to can whole, diced or crushed tomatoes, you’ll want to use something firm like Amish Paste, Atkinson, Bradley or San Marzano.
